The Open Face Heirloom Tomato Sandwich
Looking for a healthy, vegan sandwich alternative? We are totally addicted to these. Not only are they fast and easy to make – but they are fulfilling and healthy. We make this with some funky ingredients – but put together, it’s magic!
- Tamari and seaweed flavored rice cakes – (Lundberg makes and organic Non-GMO kind) – any flavor rice cake will do, but this combo is great.
- Veganaise – We actually use the grapeseed version now since canola is know to be GMO.
- Heirloom tomatoes – (my favorite is the yellow variety)
- Pink Himalayan salt
It’s pretty easy – just like you are making a sandwich! Take a rice cake, add your Veganaise, cut up your heirloom tomato and place it on the rice cake. Add salt and pepper to taste and you’re done! BONUS: Add sweet onion and avocado.
I dehydrated some kale to make salty, cheesy, crunchy kale chips to complete the meal!
Hands down this is an easy, super tasty sandwich that you’ll get hooked on!
