Want to make a really delicious kale salad?  Here’s a combo we keep coming back to.  It’s fast easy and super tasty.

What you’ll need:

  • Kale
  • Spring Mix
  • Carrots
  • Beets
  • 1 Avocado
  • Bean Sprouts
  • Heirloom Tomato
  • Sunflower Seeds
  • Sesame Seed Crackers (preferably raw)

Add a handful of the spring mix to a bowl.  This helps cut the sharpness of the kale.  If you’re cool with the kale – go for all kale!  Massage your kale, this means rubbing it between your finger tips for about 15-20 seconds each leaf.  This makes it much easier to chew, then add it to your bowl!  Cut up an heirloom tomato and avocado and add as much as you like.  Grab a spirializer or food processor and spiralize your carrots and beets.  I personally love using the spiralizer because you get such a beautiful looking spiral out of your veggies!  Sprinkle on some sunflower seeds and your bean sprouts (whatever sprout is your favorite) and there you have it!  Top with your favorite vegan dressing and you have a very filling, energy boosting salad!

I personally like to spiralize many carrots and beets and keep them in the refrigerator for a few days so I can add them to salads or anything I am making!
